Having multiple different homemade cookies during the holiday season is an amazing idea in the theory. But it does take time to bake like that to achieve the ideal holiday cookie dream unless you are doing some cookies exchange with your friends. You are not alone. I am a busy mom with a full-time job and it is hard to find time to bake. I have great news. This recipe is for you.

I would like to share my 2nd version of Three in One cookie dough today. The Cookies included in today’s recipe are SUGAR COOKIES, BUTTER ALMOND SPRITZ COOKIES, and SCOTTISH SHORTBREAD COOKIES. When I was a child, it was a treat for me to eat Scottish shortbread cookies and they were my favorite. Now, I can make them myself for my family and friends in the quickest matter and they enjoy every bite!!

Homemade Cookies Three in One Dough 2

  • Big baking bowl
  • Spatulla

Basic Dough

  • cup room temperature butter (330g)
  • cup granulated sugar (300g)
  • 2 tsp vanilla extract (10ml)

Scottish Shortbread (bowl #1) Add

  • 1 cup sifted flour (120g)

Sugar Cookies (bowl #2) Add

  • 1 large egg yolk
  • 1 cup sifted flour (120g)
  • cup cocoa *option for chocolate cookies (15g)

Butter Almond Spritz Cookies (bowl #3) Add

  • 1 large egg white
  • 1 tsp almond extract *option (5ml)
  • 1 cup sifted flour (120g)
  • ¼ cup ground almond (25g)
  • ¼ cup chocolatechip (37g)
  • confectioners sugar for decolation


  • First, make a basic wet mixture. Whisk butter until it’s creamy. Add sugar and vanilla extract. Mix well until the dough is well combined.
  • Divide the wet mixture into 3 equal amounts into separate bowls.
  • Shortbread bowl #1, add flour.
  • Sugar cookie bowl #2, add egg yolk and smix. Then combine flour. If you want chocolate flavor, you can add a pinch of cocoa powder as well.
  • Spritz cookie bowl #3, add egg white and almond extract first and mix them. Then add flour and ground almonds.

  • Place the dough from bowls #1 and #2 between parchment paper and roll the dough with a rolling pin. Make Scottish shortbread dough's thickness at 1cm and rectangle shape. Sugar cookies dough is at 0.3-0.5mm thickness. Place all the dough in the refrigerator for at least 45 minutes to 1 hour.

  • Put almond cookie dough in a piping bag with a big star tip.
  • Make 24 star shaped cookie and bake at 350℉/180℃ for 8 minutes. After cookies are baked, put chocolate on top.

  • Cut Scottish shortbread dough into 12 rectangular bars. Make 6 little holes on top.

  • For sugar cookies, use your favorite cookie cutters and cut the sugar cookies dough into your favorite shapes.

  • Bake the cookies at 350℉/180℃ for 10 minutes.
  • If you want to make your sugar cookies very fancy, you can add strawberry jam or melted chocolate in between and make a sugar cookie sandwitch.Add sprinkle of powder sugar.

1. 初めに基本生地のクリーム系材料を作ります。バターがクリーミーになるまで混ぜた後、砂糖とバニラエッセンスを加え混ぜ合わせます。

2. 3つのボールに均等に分けます。

3. スコットランド風クッキーのボール1に追加材料小麦粉をシフターを使って加えます。

4. 型クッキーのボール2に追加材料の卵黄を加え混ぜて、小麦粉を加えます。

5. アーモンドクッキーのボール3に追加材料の卵白、アーモンドエッセンスを加え混ぜて、アーモンドパウダーと小麦粉を加えます。

6. ボール1とボール2の生地を2枚のクッキングシートの間に挟み、ロールピンで伸ばします。



7. アーモンドクッキーは星型大の絞り口を入れて、絞り袋に入れてます。

8. 24つの星型のクッキーを絞り出します。180度で8分焼きます。

9. 冷蔵庫で冷やし終わったら、まずスコットランドクッキーは12個の長方形に切ります。


10. 同じく180度のオーブンで10分焼きます。
